Chicken Noodle Soup

When it's a frosty out and walks include crunch leaves, I love to come home from work and find comfort with Chicken Noodle Soup. It is a one-pot dish which is very easy to make.

Ingredients:

3c Gluten free (low-sodium optional) chicken broth

2c Water

1 White onion

2 Chicken breasts, cubed in 1 inch cubes

5 Vine tomatoes, diced

1/2 package of rice noodles. I find rice noodle linguine works well.

4 cloves garlic, pressed

pepper to taste

1 tbs dried basil

1 tbs red chili flakes

1 tsp honey

Instructions:

Place all the ingredients in a large pot. Bring to boil on medium-high heat.

Once boiling, reduce to a simmer and let cook for 35 minutes

Fall Slowcooker Chili

With the arrival of Fall, I always enjoy eating chili. It's a warm, delicious hug which reminds me of New Brunswick. I enjoy cooking chili overnight so I can bring some to work for lunch.

Since I'm in Atlantic Canada, at the end of the recipe will be a brand or store suggestion where I found the gluten-free ingredients for those which have a * next to them.

Slowcooker Chili
2 lbs Extra Lean Ground Beef
1 White Onion, diced
2 tbs Sriracha sauce
6 jalapenos, diced
2 cups broth (whichever you like)*
2 tbs gluten-free BBQ sauce*
Can of Diced Tomatoes*
Can of Tomato Paste*
2 cans Kidney Beans*
2 cans Black Beans*
1 green pepper
1 red pepper
3 tbs Sriracha sauce
1 tsp garlic
2 tbs red pepper flakes
Oil as Needed (Grapeseed works well for this)
Pepper as desired

In a large fry pan, cook the ground beef and onion in 2 tbs Sriracha sauce and some oil over medium heat until thoroughly cooked.

In a slow cooker, add ground beef and onion, about 2 tbs oil, and the rest of the ingredients. Stir. Cook on low for 6-8 hours.
