Chicken Noodle Soup

When it's a frosty out and walks include crunch leaves, I love to come home from work and find comfort with Chicken Noodle Soup. It is a one-pot dish which is very easy to make.



Ingredients:
3c Gluten free (low-sodium optional) chicken broth
2c Water
1 White onion
2 Chicken breasts, cubed in 1 inch cubes
5 Vine tomatoes, diced
1/2 package of rice noodles. I find rice noodle linguine works well.
4 cloves garlic, pressed
pepper to taste
1 tbs dried basil
1 tbs red chili flakes
1 tsp honey

Instructions:
Place all the ingredients in a large pot. Bring to boil on medium-high heat.

Once boiling, reduce to a simmer and let cook for 35 minutes
